I think that one of the convenience items that can be the easiest to make yourself is salad dressing. But it’s also one that we totally overlook, right? I mean, after pulling together a whole meal, who wants to also go to the trouble of making your own salad dressing? The thing is that it’s no trouble at all! AND when you make it yourself you can keep the ingredients super simple and it’s totally customizable to your taste and needs (like if you need less salt!).
Don’t get me wrong, I still buy salad dressings, but I also make my own. And if I run out of salad dressing, who cares? I’ll just make my own. These are my go-to, quick and super simple dressings you can make yourself in no time at all:
- Simple Balsamic Vinaigrette – Whisk together 2 Tbs extra virgin olive oil, 2 tsp balsamic vinegar, 1 tsp dijon mustard, pinch of salt and freshly ground pepper. Perfect for a green salad with fresh berries topped with Parmesan cheese.
- Honey Mustard – Whisk together 2 Tbs grainy mustard, 1 Tbs honey, splash of white wine vinegar or champagne vinegar, freshly ground pepper. I love this over a simple and plain green salad, but it’s also good with apples.
- Spicy Peanut Butter – Whisk together 2 Tbs smooth peanut butter, 1 Tbs lite soy sauce, 1/4 tsp ground ginger (or even better 1/2 tsp freshly ground ginger root), freshly ground pepper. Add up to 1/4 cup warm water, until you get to the consistency you like. Then, add scriracha to your spicy taste. Serve over hot or cold noodles or for an Asian coleslaw.
