Veggies Everywhere

I’m a little obsessed with getting more vegetables into my family.  My sweet {vegetable averse} husband has learned to tolerate me sneaking them into all kinds of dishes.  Why bother?  Well, vegetables are a rich source of vitamins, some minerals, fiber, and water.  They also provide phytochemicals that are known to be protective against cancer, heart disease, and diabetes – nutrients you can’t get from other food groups.   Variety is the key, but many people get into a rut or think they only like a handful of veggies.  I love to find ways to add vegetables in surprising ways.  Here are a few of my latest sneaky dishes:
