I’m a little obsessed with getting more vegetables into my family. My sweet {vegetable averse} husband has learned to tolerate me sneaking them into all kinds of dishes. Why bother? Well, vegetables are a rich source of vitamins, some minerals, fiber, and water. They also provide phytochemicals that are known to be protective against cancer, heart disease, and diabetes – nutrients you can’t get from other food groups.
