This is more support for my post called The Key to Success: Preparation. Sunday was my big prep day this week. I washed, chopped, and organized all of this produce (plus an onion and green beans)…
But before I did that I made our weekly menu. Starting with a menu makes everything easier from shopping to preparing the meal that night, there’s no worry about pulling the meal together. As I prep, I put things into containers with labels of the dish they will make later in the week.
I need to do a post about how to stock your pantry with staples, because that’s also super important. Having a good selection of whole grains, pastas, jarred sauces, vinegars, olives, and other staples keeps meals interesting, plus baking supplies ensure that we always have fresh bread. All of that is for another day.
For now, here’s our menu for the week:
Chicken Vegetable & Rice Soup
with Salad & Cornbread
Tofu Vegetable Curry
with Brown Rice
Roasted Brussels Sprouts with Chicken Sausage
Salmon Patties
with Roasted Rosemary Potatoes
Butternut Squash, White Beans and Farro
Dinner Out with Friends
What’s on your menu this week?
